The couple pause just outside the restaurant and ask if they′ve missed breakfast, half-expecting to be turned away. Instead, the waitress smiles, explaining that there is no such thing as a missed meal at Hermitage Bay. She leads them past a row of tables perfectly positioned to take advantage of the beautiful views before settling on the one closest to the beach. Placing menus on the table, she describes the freshly squeezed local juice of the day: a tropical medley of guava and soursop.
After browsing the menu – a collection of breakfast favourites, fresh fruits, and local specialities – they are deciding between the made-to-order omelette and the Antiguan chop-up. Without missing a beat the waitress responds as any gracious hostess would, suggesting that he simply order both.
Working in unison, our staff move with ease throughout the three-tiered restaurant delivering entrées, refilling water glasses, and clearing plates as they go. Though the menu changes daily, there is a constant presence of local ingredients and organic produce. Day or night, the dress is always island chic – laid back and comfortable, flowing skirts and loose linens.
For dinner, the restaurant is transformed as tables and chairs are draped in white cloth, candle flames dance in glass vases and cool blue lights decorate the trees. In the background, the beats of soft jazz or steel drums accompany the natural orchestra of waves, rustling leaves and insect melodies.
