In our desire to offer fresh local produce we have embarked on growing our own organic vegetables in our kitchen garden at the hotel site.
The project is going well and we are now growing crops such as peppers, tomatoes, spinach. callaloo, aubergine (egg plant), okra and cucumbers (boy did we have a lot of cucumbers at first!) and herbs such as thyme, parsley, coriander and basil.
We expect to expand this list as we learn and develop our expertise. Our organic gardener, Kempton, is also a supervisor in the restaurant so if you ever want to hear about the project or take a guided tour with him, do please just ask.
