Our Executive Chef, Desroy Spence, and his team in the kitchen deliver a 5-star varied menu, mixing the best of Modern European cuisine with Caribbean favourites and American classics.
Menus change daily and there is always an opportunity to try something new. We use locally-sourced produce wherever possible, ensuring that we only have the freshest ingredients, as well as reducing food miles and supporting local businesses. Quite a large portion of the fruit and vegetables we use is now grown in our very own organic garden.
